before I forget....

(this recipe will make between 40-50 cookies depending on how big you make them. if you want less, just half all the ingredients, and voila!)


2c. butter
1/2 c. white sugar
1 1/2 c. brown sugar, packed
2 tsp. vanilla
4 eggs, beaten
2 pkg. INSTANT vanilla pudding
5 c. unsifted flour
2 tsp. baking soda
2 pkg. (12 oz.) chocolate chips

Cream butter and then add both sugars until creamy. Beat in eggs and vanilla. Combine dry pudding mix with above ingredients until smooth and creamy. Mix together flour and baking soda; add gradually. Mix chocolate chips into dough; the batter should be stiff. Drop by spoonfuls onto a greased cookie sheet. (i don't grease my cookie sheets because the cookies are buttery enough).

Bake at 180 degrees for 8 to 10 minutes or until golden brown. Let the cookies cool on the sheet for 2 or 3 minutes before removing. They will be very soft. NOTE: 1 (16 ounce) package of M&M'SĀ® can be substituted for the chocolate chips.

Another goodie (but much easier to make--takes only about 10 min!)

RICE CRISPY TREATS (or Rice Bubble Treats or LCMs :)

  • 3 tablespoons butter or margarine
  • 1 package (10 oz., about 40) regular marshmallows
  • 6 cups Rice KrispiesĀ®

Note: for whatever reason I can't find plain marshmallows by themselves, so I just bought the mixed ones, picked out the plain and threw away the raspberry :)
I also prefer to make it in the micro-wave. but that's just me.

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated.
3. Using buttered spatula or wax paper, evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.

In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above. Microwave cooking times may vary.
